Sassy Pork Roast w/ White Beans
Sassy Pork Roast w/ White Beans
Ingredients
- 3 to 4 pound pork roast with fat trimmed
- 2 bay leaves
- 1 can stout beer
- 3 cans great northern or cannellini beans rinsed
- 1 can rotel (mild)
- 1 4 oz can hatch chilies diced (mild)
- 1 teaspoon sea salt
- 1/2 teaspoon sage
- 1 teaspoon granulated garlic
- 1/2 teaspoon white pepper
Instructions
- Put bay leaves at the bottom of the slow cooker. Rinse the roast and place on top of the bay leaves. Put beans around roast and cover with beer. Add remaining ingredients in a bowl and mix then pour over the roast. Cook at low for 6 to 7 hours.
- Serves 6 to 8 depending on size of roast.
