Quick Cuban Black Beans

Serves: 4
Ingredients
3 cans black beans
½ bunch cilantro
1 small red onion
½ red pepper
½ orange pepper
4 cloves garlic
1 teaspoon oregano
1 teaspoon cumin
2 teaspoons white vinegar
2 teaspoons sugar
Instructions
Put beans into a sauce pan and begin to heat on medium heat, turning to low when the beans are hot. While beans are heating, add diced red onion, diced red and orange pepper and diced garlic. Once hot, add spices, vinegar and sugar and let simmer for 20 minutes. Chop cilantro making sure to leave a few stems (make sure the stems left are chopped into very small pieces. Add cilantro to beans and cook for another 20 minutes.
Serves 6 to 8.
