Ingredients

  • 1 cup fresh pineapple, chopped
  • 1/4 cup white rum
  • 1/2 cup sugar
  • 1 tablespoon gelatin powder
  • 1/4 cup cold water
  • 1 cup heavy cream
  • 1 teaspoon vanilla extract
  • Fresh mint leaves for garnish

Instructions

  1. In a blender, combine the chopped pineapple and rum, and blend until smooth.
  2. Pour the pineapple and rum mixture into a saucepan, add sugar, and heat over medium heat until sugar dissolves completely.
  3. Sprinkle gelatin over cold water and let it bloom for about 5 minutes.
  4. Add the bloomed gelatin to the warm pineapple mixture and stir until gelatin is completely dissolved. Remove from heat and let cool to room temperature.
  5. In a separate bowl, whip the heavy cream with vanilla extract until stiff peaks form.
  6. Fold the whipped cream gently into the cooled pineapple mixture until well combined.
  7. Pour the mousse into serving dishes and refrigerate for at least 4 hours, or until set.
  8. Garnish with fresh mint leaves before serving.
