Orange Roughy with Red Peppers

Ingredients

Serves 4-6
2 T. olive oil
8 orange roughy fillets
2 red bell peppers, seeded and sliced
1 tsp. dried thyme leaves
2 T. lemon juice
salt and pepper

Instructions

Heat oil in skillet. Add peppers. Cook 2 min. Place fillets on top. Sprinkle with thyme, lemon juice, salt and pepper. Lower heat to medium low, cover skillet and cook 12 min or until fish flakes easily with fork.
