Ingredients
- Serves 4-6
- 2 T. olive oil
- 8 orange roughy fillets
- 2 red bell peppers, seeded and sliced
- 1 tsp. dried thyme leaves
- 2 T. lemon juice
- salt and pepper
Instructions
- Heat oil in skillet. Add peppers. Cook 2 min. Place fillets on top. Sprinkle with thyme, lemon juice, salt and pepper. Lower heat to medium low, cover skillet and cook 12 min or until fish flakes easily with fork.
