Meatball Soup

Serves: 4
Ingredients
Meatballs:
1 lb ground beef
1/2 lb ground pork
1 small onion chopped very fine
1 egg
1/4 cup milk
1/2 cup corn meal
1/2 tsp salt
1/2 tsp paprika (use Hungarian paprika for a little extra spice)
1/2 tsp granulated garlic
5 cans beef consumme
3 cans water
2 cans ortega green chilies, mild, 4 oz cans
1 medium onion chopped
1/2 tsp basil
1/2 tsp oregano
10 drop tabasco
2/3 cup rice
3 carrots sliced (long thin carrots work best)
Instructions
Combine all ingredients for the meatballs making sure it is well mixed. Make medium size meatballs and set aside. Do not brown.
In a large stock pot, add consumme, water, chilies, onion, and spices and bring to boil. Add carrots, rice, and meat ballas and simmer 1 hour.
Serves 6 to 8.
