Meatball Soup
Ingredients
- Meatballs:
- 1 lb ground beef
- 1/2 lb ground pork
- 1 small onion chopped very fine
- 1 egg
- 1/4 cup milk
- 1/2 cup corn meal
- 1/2 tsp salt
- 1/2 tsp paprika (use Hungarian paprika for a little extra spice)
- 1/2 tsp granulated garlic
- 5 cans beef consumme
- 3 cans water
- 2 cans ortega green chilies, mild, 4 oz cans
- 1 medium onion chopped
- 1/2 tsp basil
- 1/2 tsp oregano
- 10 drop tabasco
- 2/3 cup rice
- 3 carrots sliced (long thin carrots work best)
Instructions
- Combine all ingredients for the meatballs making sure it is well mixed. Make medium size meatballs and set aside. Do not brown.
- In a large stock pot, add consumme, water, chilies, onion, and spices and bring to boil. Add carrots, rice, and meat ballas and simmer 1 hour.
- Serves 6 to 8.
