Italian Potato Soup

Ingredients
  • 3 cups Potatos
  • 1 onion
  • 3 cloves garlic
  • 1/4 cup olive oil
  • 1 quart milk or half/half
  • 1 tesp basil or Italian seasoning
  • salt and pepper
Instructions
  1. Chop potatos into small pieces cover with water and cook.
  2. Heat olive oil in a large pot and add chopped onion. Cook until clear and add garlic for a minute or two. Drain half of the water from the cooked potatos and pour into the pot. Add the milk and herbs and stir. Serve with grated parmesean cheese.
