Ingredients
- 6 large eggs
- 1/4 cup mayonnaise
- 1 teaspoon mustard
- 1/8 teaspoon paprika, plus extra for garnish
- Salt to taste
- Fresh chives for garnish, optional
Instructions
- Place eggs in a saucepan and cover with water. Bring to a boil, then cover, turn off the heat, and let sit for 12 minutes.
- Transfer eggs to a bowl of ice water to cool for 5 minutes, then peel them.
- Halve the eggs lengthwise. Remove yolks and place them in a mixing bowl.
- Mash the yolks with a fork. Add mayonnaise, mustard, paprika, and salt. Mix until smooth and creamy.
- Pipe or spoon the yolk mixture back into the egg white halves.
- Garnish with a sprinkle of paprika and optional chives.
- Chill in the refrigerator until ready to serve.
