Cardamom Cranberry Pumpkin Muffins

2 eggs, slightly beaten
11/4 cups sugar
1/2 cup canola oil
1 cup pumpkin
2 cups flour
1/4 cup oat flour (or regular)
1 tsp. baking soda
1/2 tsp. salt
1 T. pumpkin pie spice
1/4 tsp. cardamom
4 ounces cinnamon applesauce
11/4 cups chopped fresh or frozen cranberries


Combine eggs, sugar, oil, pumpkin and applesauce, mix well. In a separate bowl, mix flours, spices, soda, and salt. Make a well in center and pour pumpkin mixture into well. Stir just until mixed, then stir in cranberries.

Spoon into greased muffin pans. Bake at 350 for 20 to 30 minutes or until a toothpick inserted in center of muffin comes out clean.

Yield: 1 1/2 dozen
